Ingredients:
8-10 oyster mushrooms
1 cup Cornflour
4 Tbsp plain flour (or rice flour for Gluten free)
1 Tbsp baking powder
1/2 tsp garlic powder
1/2 tsp onion powder (optional)
1/2 tsp salt (optional)
1/4 tsp black pepper
Pinch of chilli powder (optional)
1 cup cold water (Tip: use chilled sparkling water for extra crispy batter)
Light oil for frying
Soy sauce or your favourite sauce for dipping (optional)
Instructions:
Clean the oyster mushrooms by wiping them gently with a damp cloth. Trim the tough ends and separate them into smaller, bite-sized pieces.
In a mixing bowl, combine all the dry ingredients. Whisk them together to ensure they are evenly mixed.
Slowly pour in the water and whisk into the dry ingredients. Continue whisking until the batter becomes smooth. It should have a consistency similar to pancake batter. If batter is too thick add a splash more water.
Heat oil in a deep pan or pot to approximately 350°F (180°C).
Dip each oyster mushroom piece into the batter, ensuring it is well coated on all sides. Shake off any excess batter.
Carefully drop the battered mushrooms into the hot oil, a few at a time, to avoid overcrowding the pan. Fry them for about 3-4 minutes or until they turn golden brown and crispy.
Using a slotted spoon or tongs, remove the fried mushrooms from the oil and place them on a paper towel lined plate to drain excess oil.
Repeat the process with the remaining oyster mushrooms until all are fried.
Serve the crispy battered oyster mushrooms hot as an appetizer, snack, side dish, in wraps or with salad. They can be enjoyed on their own, or served with various dipping sauces such as; soy sauce, mayonnaise, sweet chilli, sour cream, sriracha or BBQ sauce for added flavor.
