Creamy Wild Mushroom Gnocchi Recipe with Vegetable Confetti

Creamy wild mushroom gnocchi dish

Vegetarian | 20 mins | Easy | Serves 2-4


This is a recipe for the mushroom lovers... an easy one pot recipe packed full of goodness and flavor. Perfect for some quick indulgence after a busy day at work or why not impress your loved ones for an at home dinner date.


Ingredients:


  • 2-3 cups of gnocchi (you can use store-bought or make your own if you're feeling adventurous).

  • 2 cups of sliced white mushrooms

  • 1 cup of fresh or dried wild mushrooms (such as shiitake, or oyster), sliced.

  • 4 cloves of garlic, minced.

  • 1 small onion (brown), finely chopped.

  • 1 cup of vegetable stock.

  • 1 cup of heavy cream (or a non-dairy alternative, if you prefer).

  • A handful of fresh herbs (such as thyme or parsley), chopped.

  • Salt and pepper to taste.

  • A generous sprinkle of microgreens (such as pea shoots or sunflower sprouts) for the finishing touch.


Instructions:


Cook the gnocchi according to the package instructions until they're just tender and floating on the surface of boiling water. Drain, drizzle with olive oil and and set aside. (3-4 mins)

In a large pan, heat a drizzle of olive oil over medium heat. Add the chopped onion, and sauté until lightly golden (2-3 mins). Add the garlic and butter and cook until melted and fragrant (1-2mins).


If using dried/dehydrated wild mushrooms you will need to soak them in the hot vegetable stock for 1-2 minutes first and then add the broth and mushroom to the pan to simmer for a few minutes.

If using fresh wild mushrooms add them to the pan and cook until they start to release their earthy aroma and become tender. This usually takes around 5-7 minutes.

Pour in the vegetable or mushroom broth and let it simmer for a few minutes, allowing the flavors to mingle beautifully.

Add the cream (or non-dairy alternative) to the pan, and season with salt, pepper, and your chosen fresh herbs. Let the sauce simmer for another few minutes, allowing it to thicken slightly.
